Bhel

A popular snack in Western India, bhel can be prepared in many ways, and also comes in varied versions. Two of the most popular are Chinese and Mexican bhel. Since roadside stalls are not the most hygienic of places to relish this delicacy, the following recipes will help you prepare a good snack from the comfort of your home.

To make Chinese bhel, you will need fried noodles and hot garlic sauce, as well as vegetables like onions, mushrooms and capsicum. Mix the noodles with the finely chopped vegetables and garlic sauce. Stir the mixture well, and serve in a bowl with fresh coriander leaves for garnishing.

Mexican bhel is made with tortillas (soft, thin flatbread), beans (black or pinto), salsa, enchilada and tomato sauce, taco seasoning, cilantro, cheddar cheese, and lettuce leaves. Deep fry the tortillas, cut into small pieces and set aside. In a separate vessel, boil the beans with taco seasoning. In another pan, mix the enchiladas and tomato sauce with chilli, salt and cumin powder and cook for a few minutes till the sauce bubbles. To prepare the Mexican bhel, place the tortillas on a serving plate and add the beans and sauce mixture prepared earlier to it. Top with finely chopped onions, lettuce, cheese, cilantro and coriander. To make it spicy, you can add salsa sauce or jalapeno peppers.
